Meal Prep Ideas For February 2019

The most challenging part of self love is following through with action. One of the many ways we can show ourselves love is by providing the nutrients our bodies need and deserve. Our workouts aren’t easy, and what you do in the kitchen will help determine your results. When you add highly intense physical activity into your daily regime, it becomes even more critical that you fuel up appropriately. Eating well is the best way to pay your body back – plus some. Below are recipes that we have gathered to help you stay on track. Give yourself some love.  Enjoy!

 

{Week One}

This requires 45 minutes of mostly-hands off time, and you can feel really good about it because it looks pretty and tastes delicious, especially with a big ol’ side of avocado and hummus. And then you can enjoy it 5x over in all its different forms (cold salad! warm veggie / rice bowl! soup! pasta! taco! cause I don’t know, maybe you like broccoli in your tacos? whatever) and appreciate all the yummy nutrition and back-to-dinner-table-basics it brings into your life.

These Philly Cheesesteak Stuffed Peppers are the most delicious dinner idea, and they’re a low carb way to get your fill of your fave sandwich while also sneaking some extra veggies into your diet. Anytime I can do a stuffed vegetable version of one of my fave foods I get so excited. Nothing like getting the flavours in while keeping the calorie count down!

{Week Three}

This might be the quinoa casserole of all quinoa casserole recipes. If you like the combination of chicken and quinoa AND marinara sauce, then you are going to drool over this amazing chicken parmesan casserole. It feeds 6 people so it’s perfect for a family meal or to prep for a few meals throughout the week. Not to mention, it’s packed with protein and veggies. What more could you ask for?

I’m all about easy meals that can be made and on the table in less than 30 minutes. Easy Egg Roll in a Bowl is the perfect recipe for when time is not in your favor and you need something quick.
