Hi!

I don’t know about you, but I love pasta.  I also don’t eat enough veggies/fruits in my diet.  Here is the solution- Pesto Zucchini Noodle Pasta!  It really does taste just as good, if not better, and is a healthy substitute for flour based noodles. Zucchini contains significant quantities of potassium, folate, and vitamin A.  All of these lovely vitamins and minerals are essential for your health.  Also, fun fact, zucchini is treated as a vegetable in the culinary context, however it’s botanically a fruit.  Here’s the recipe:

Breifton’s 5-Blade Spiralizer

♥Ingredients♥

2 spiralized zuchinnis

1 cup of raw pine nuts

1/2 cup of extra virgin olive oil

1 1/2 tsp sea salt

1 1/2 tsp pepper

juice from 1 lemon

3 cups of fresh basil

(If this is to time consuming feel free to just go to the Puyallup Costco and buy your own pesto ;))

♥Instructions♥

Pretty simple.  Just throw all the ingredients into a food processor until smooth.  Cook the noodles on medium heat for 3-5 minutes.  I like to add a little olive oil in the pan to give the noodles a little more flavor, but it’s not necessary. Once the noodles are done combine with the pesto. If you need a little more protein in your diet, just add chicken.  Bon appetit!
