Spring showers, blooming flowers, and… new goals! This month is all about stepping outside of your comfort zone. We want to challenge you, Vie Girls, to push yourselves just a little bit harder. As many of you know, we are focusing on pull-ups for the month of April. While showing up to class and being consistent with your workouts is important, it is imperative that you make proper nutrition a top priority to aid your strength gains! Your muscles are working hard for you and you need to reward them with a healthy, balanced diet. We have put together a list of meal ideas to help keep you prepared and on track. Let’s head to the kitchen, ladies! 

{WEEK ONE}

These paleo spinach avocado chicken burgers are the ultimate healthy burger. They’re packed with healthy fats, protein, and even hidden veggies. Make them on a weeknight, or serve them at a backyard cookout.

A package of gnocchi from the store has always been one of our favorite easy dinners, but now it just got a whole lot easier. That’s because we discovered you don’t even actually have to boil the gnocchi in order to make it for dinner. Toss them directly from the package onto a sheet pan with a slew of veggies, roast them for 20 minutes, scoop into bowls, and dig in. Seriously — that’s it.

{WEEK FOUR}

Healthy seriously never looked so good. I like to pretend I am a chef sometimes and try to get real fancy and make pretty Whole30 and Paleo compliant recipes. I brought my A-Game with this one and it turned out even better than I imagined. These chicken patties may look extravagant, but they are one of the easiest meals to throw together. They can serve as an easy weeknight meal or even a great appetizer for a family gathering. Even though these are calling “Buffalo” Chicken Patties, they are not too spicy. My 3-year-old enjoys them, so if you don’t like spicy food, still gives these a try.

Meatballs have always been a struggle for me to perfect, getting the texture right is somewhat of a science that evades me. That’s why I prefer Costco meatballs in my death row pasta meal. But somehow these chicken meatballs come together nicely. The texture is best when baked and the flavor can’t be beat.
